June: The results are a bit suprising
Last June, NutraEx exhibited at IFT for
the first time. We wanted to have some
fun as we introduced ourselves to the
food scientists there.
The contest presented four samples of chocolate milk. For all four samples, the milk was
the same, the cocoa was the same; everything was the same, except – each sample had a
different sweetener.
The challenge was to find the one sweetened completely with sugar.
Since our contestants were mostly food scientists we took the opportunity to collect
sensory panel data. These are the items we asked them to score. And give an overall
rating from 1-10. Brands represented by our expert sensory panel.
As you can see they are quite high and fairly close together.
The scores might have been even higher. We cannot bring milk from Canada
to the US. So we had to purchase milk locally and add a cold chocolate mix to
the milk. This resulted in less than desirable texture in some of the samples
However, these scores are still pretty close.
